Step-by-step recipe

  1. Prep the veggies

    Peel the onion and slice it thin. Peel the carrots and cut them into small cubes. Drain and rinse the white beans in the colander.

  2. Brown the sausages

    Heat half the olive oil in the skillet over medium-high heat. Brown the 4 sausages on all sides, then move them to a plate.

    Tip · Don't prick the sausages, they'll keep their juices and brown better. Don't move them too early so they get good color.
  3. Cook the veggies

    In the same skillet, turn down to medium and add the rest of the oil. Cook the onion and carrots, stirring, without letting them burn.

  4. Add the tomatoes and beans

    Pour in the crushed tomatoes and the white beans. Add the bouquet garni, 10 cl of water, salt and pepper, then stir.

  5. Simmer with the sausages

    Put the sausages back in the skillet, pushed down into the beans. Cover and let it simmer over low heat, flipping the sausages halfway through. They should be cooked through with no pink (70 °C minimum).

    Tip · If the beans stick or dry out, add a small splash of water. Cut a sausage open to make sure it's cooked through.
  6. Adjust and serve

    Pull out the bouquet garni. Taste and adjust the salt and pepper. If the sauce is too runny, let it reduce for 2 min uncovered before serving.
