  1. Peel and cut the potatoes

    Peel the 600 g of potatoes and cut them into chunks of about 3 cm so they cook fast and evenly.

  2. Cook the potatoes

    Put them in the large saucepan, cover with cold water, add the pinch of salt and bring to a boil. Cook over medium heat until a knife slides in with no resistance.

    Tip · Start the potatoes in cold salted water, not boiling, so the inside cooks at the same time as the outside.
  3. Shape and cook the patties

    While the potatoes cook, shape 2 patties of 150 g. Heat the nonstick skillet over high heat, with no fat or just a drop of oil, and cook 4 min per side, with no pink left inside (at least 70 °C). Add pepper at the end.

    Tip · Don't press the patties with the spatula while they cook, you'd lose their juices and they'd dry out, especially at 5 % fat.
  4. Take out the potatoes

    Lift the potatoes out with the slotted spoon into the colander, keeping the cooking water on the heat. Let them drain and steam dry.

  5. Cook the green beans

    Drop the 300 g of frozen green beans into the leftover cooking water, nothing else added. Simmer 5 min, then drain them in the colander.

  6. Mash

    Put the potatoes back in the empty saucepan and mash them with the potato masher. Warm the 10 cl of milk, then stir it in with the 20 g of butter and a pinch of pepper, mixing until smooth.

  7. Plate up

    Divide the mash, green beans and one patty per plate. Serve right away, nice and hot.
