  1. Prep the celery root

    Peel the 0.4 kg of celery root and cut it into cubes of about 2 cm. Peel the garlic clove and cut it in half.

  2. Boil the celery root

    Put the cubes and garlic in the saucepan, cover with cold salted water and bring to a boil. Simmer until a knife slides in with no resistance.

  3. Drain the celery root

    Drain in the colander, saving a small glass of the cooking water. Don't mash it yet, just put the cubes and garlic back in the empty saucepan.

  4. Mash it

    Warm the 8 cl of milk in the small saucepan, then pour it over the celery root with the 20 g of butter. Mash with a fork or potato masher, season with salt and pepper, and add a splash of cooking water if it's too thick.

    Tip · Add the hot milk in two goes and the cooking water little by little so you stay in control of the texture, since well drained celery root soaks up liquid fast.
  5. Shape the patties

    Season the 240 g of ground beef with salt and pepper, then shape 2 patties about 2 cm thick without packing them too tight.

  6. Grill the patties

    Heat the skillet over medium-high with 1 tbsp of olive oil. Cook the patties about 4 min per side, until cooked through with no pink left, at least 70 °C inside.

    Tip · Don't press the patties with the spatula while they cook, you'd lose their juices. Cut one open in the center to check there's no pink left.
  7. Plate and serve

    Divide the hot mash between two plates and top each with a patty. Finish with freshly ground pepper.
