Turn the oven to 240 °C (gas mark 8), convection if you can. Let it heat up while you prep everything else.
Cut the veggies
Wash the zucchini and red bell pepper. Slice the zucchini into very thin rounds, 2-3 mm, seed the bell pepper and cut it into thin strips of the same thickness.

Season the veggies
Put the veggies in the bowl with 1 tbsp of olive oil, salt and pepper. Toss with the spoon.
Roll out the dough

Top the pizza
