  1. Preheat and take out the dough

    Turn the oven to 220 °C. Take the dough out of the fridge right away so it comes to room temperature, it'll be easier to roll out.

  2. Cut the veggies

    Wash the zucchini, eggplant and red bell pepper (seeded). Cut them into small dice or thin slices, about 1 cm.

  3. Sauté the veggies

    Heat the olive oil in the skillet over high heat. Add all the veggies, season with salt and pepper, and sauté, stirring, until golden and tender.

    Tip · Don't cover the skillet or crowd it, the veggies should brown, not release water, otherwise the pizza will be soggy.
  4. Roll out the dough

    Unroll or roll out the dough on parchment paper set on the baking sheet, no oil.

  5. Make the tomato sauce

    In the bowl, stir the tomato paste with 3 tbsp of water and the oregano. Spread it over the dough, leaving a 1 cm border.

    Tip · The water makes the paste easy to spread, but don't add more, or the crust turns soft.
  6. Top the pizza

    Scatter the sautéed veggies over the sauce. Tear the turkey ham into pieces and lay them on top, then add the mozzarella, sliced or diced.

  7. Bake the pizza

    Slide the baking sheet in at 220 °C and bake until the crust is golden and the mozzarella is melted.

  8. Serve

    Take the pizza out of the oven, let it rest 2 minutes, then slice it. Add pepper to taste.
