Step-by-step recipe

  1. Preheat the oven

    Turn the oven to 220 °C, convection if you have it. Don't put the baking sheet in: it stays cold for now.

  2. Cut the veggies

    Slice the zucchini into thin rounds, the yellow bell pepper into strips and the red onion into thin slices. Put them in a mixing bowl.

  3. Roll out the dough

    Take the dough out of the fridge right at the start so it relaxes. Roll it into a thin circle or rectangle on a sheet of parchment paper set on the cold baking sheet, then set the sheet aside.

    Tip · If the dough shrinks back when you roll it, let it rest 2 min then try again, it'll stretch with no effort.
  4. Season the veggies

    Toss the veggies with the olive oil (0.5 tbsp), salt and pepper, until well coated.

  5. Pre-roast the veggies

    Spread the veggies on a second sheet of parchment paper on another baking sheet, or right on the rack, and roast them for 10 min so they get lightly roasted. If you only have one sheet, first bake the plain dough for 5 min, then take it out and top it.

    Tip · Slice the veggies really thin and pat them dry if needed, otherwise they release water and make the crust soggy.
  6. Top the pizza

    Spread the tomato sauce (50 g) over the dough, leaving a 1 cm border. Tear the mozzarella into pieces, scatter half of it, add the roasted veggies, then the rest of the mozzarella.

  7. Bake the pizza

    Slide the topped sheet into the oven at 220 °C until the edges are golden and the mozzarella is melted and lightly browned.

  8. Add the prosciutto

    Take the pizza out of the oven and lay the prosciutto (50 g) in strips on top, without cooking it. Add pepper to taste, slice and serve right away.

    Tip · Only add the prosciutto once the pizza is out of the oven, it stays tender and doesn't dry out.
