Step-by-step recipe

check things off as you go
  1. Preheat the oven

Turn the oven to 220 °C with top and bottom heat. Put the baking sheet inside to heat up if you want a crispier crust.

  2. Prep the toppings

Thinly slice the white mushrooms (35 g). Cut the ham (35 g) into strips, the mozzarella (35 g) into small pieces and crumble the gorgonzola (20 g).

Tip · If your mushrooms are damp, wipe them with a paper towel instead of rinsing them for ages, otherwise they release water and make the pizza soggy.
  3. Roll out the dough

Unroll the 2 ready-made pizza crusts with their parchment paper, each one on a baking sheet or on the paper set on the sheet.

  4. Spread the tomato sauce

Spread the 4 cl of tomato sauce evenly over the two crusts with the back of the spoon, leaving a 1 cm border. Then sprinkle 0.5 tsp of oregano, split between the two pizzas.

  5. Top the pizzas

On each pizza, spread half the mozzarella, the shredded Swiss cheese (25 g total), the gorgonzola, the ham and the mushrooms. Go very easy on the salt, since the ham and cheeses are already salty, and add a little pepper.

Tip · Don't overload the middle of the pizza: toppings spread in a thin, even layer cook faster and keep the crust crispy. Serve with a green salad if you have one.
  6. Oil the edges

Drizzle the 1 cl of olive oil in a thin stream over both pizzas, splitting it between them, with a bit on the crust edges so they turn golden.

  7. Bake the pizzas

Bake the pizzas at 220 °C until the crust is golden and the cheeses are fully melted and lightly browned. If your baking sheet can't fit both, bake them one after the other.

  8. Rest and serve

Take the pizzas out and let them rest 2 minutes before slicing. Serve right away.
