  1. Peel and cut

Peel the onion and the carrot. Dice the onion small and slice the carrot into thin rounds. Keep the rounds whole for texture.

  2. Cook the onion

Heat the oil in the skillet over medium heat. Add the diced onion and cook for 3 min without browning.

  3. Add the carrots

Add the carrot rounds to the skillet with the onion. Sprinkle with a pinch of salt and cumin. Stir well.

Tip · If the carrots start to stick, add 1 tbsp of water to the skillet so they don't burn.
  4. Cook the carrots

Cover the skillet and cook the carrots over low heat for 5 min, stirring now and then. They should stay a little crunchy.

  5. Add the chickpeas

Drain and rinse the canned chickpeas. Add them to the skillet with the carrots and onion. Stir well to coat everything.

  6. Start the couscous

In the saucepan, bring 30 cl of water to a boil. Sprinkle in the couscous while stirring to avoid lumps.

  7. Cook the couscous

Lower the heat, cover the saucepan and cook the couscous for 5 min over very low heat. Turn off the heat and let it rest for 2 min, covered.

Tip · For a softer texture, let the couscous rest 5 min longer, covered, before serving.
  8. Mix it all

Spoon the contents of the skillet over the couscous in the saucepan. Gently stir to combine everything.
