Step-by-step recipe

check things off as you go
  1. Preheat the oven

Turn the oven on to 200 °C, convection or top and bottom heat.

  2. Peel and cut the vegetables

Peel the potatoes and cut them into 3 mm slices. Wash the zucchini and cut them into 5 mm rounds.

  3. Precook the potatoes

Drop the potato slices into a saucepan of salted boiling water and let them simmer. Drain them in the colander.

Tip · The potatoes should stay slightly firm, they finish cooking in the oven. Drain them well so they don't water down the cream.
  4. Cook the bacon

Cook the 120 g of diced smoked bacon in the dry skillet over medium heat until golden. Take it out of the skillet and set it aside.

  5. Pan-fry the zucchini

In the same skillet, add the olive oil and brown the zucchini over high heat, stirring. Season lightly with salt and pepper.

Tip · Don't put too many zucchini in the skillet at once, or they release water and won't brown. Do them in two batches if needed.
  6. Make the cream

In the mixing bowl, mix the 20 cl of crème fraîche, the 10 cl of milk, the pinch of nutmeg, salt and pepper.

  7. Assemble the gratin

In the dish, mix the potatoes, zucchini and bacon. Spoon the cream and milk over the top and spread it out well.

  8. Bake

Bake at 200 °C until the top is nicely golden and the cream is bubbling. Let it rest for 5 minutes before serving.

And there you go, it's readyCheck off every step to celebrate.
