  1. Peel the potatoes

Peel the potatoes and cut them into 2 cm cubes. Set them aside.

  2. Cut the zucchini and onion

Wash the zucchini and cut them into thick 1 cm rounds. Peel and thinly slice the onion.

  3. Cook the onion

Set the skillet over medium heat with 1 tbsp of olive oil. Add the onion and cook for 3 min without letting it brown.

Tip · If the onion starts to burn, lower the heat and add a little water to the skillet to loosen it.
  4. Cook the potatoes

In the same skillet, add the potatoes and the rest of the oil. Cook for 5 min over medium heat, stirring often.

  5. Add the zucchini

Stir in the zucchini and the whole sausages. Season lightly with salt and pepper. Cook for 5 min, stirring now and then.

Tip · For more golden sausages, take them out of the skillet after 3 min of cooking, brown them separately for 2 min in a hot skillet with no lid, then put them back with the vegetables.
  6. Cover and simmer

Lower the heat, cover the skillet and simmer for 10 min, stirring once halfway through. The potatoes should be tender.

  7. Serve hot

Serve straight from the skillet or in shallow bowls.
