Step-by-step recipe

  1. Boil the water

Fill the saucepan halfway with water and bring it to a boil over high heat. Add a pinch of salt as soon as the water starts to simmer.

  2. Cook the pasta

Drop the 160 g of pasta into the boiling water and let it cook for the time on the package (usually 8 to 10 min). Stir now and then with the wooden spoon.

  3. Drain the pasta

Tip the pasta into the colander and let it drain without rinsing. Keep the saucepan of hot water for the spinach.

  4. Cook the garlic

Peel the garlic clove and mince it finely. Heat the oil in the nonstick skillet over medium heat and cook the garlic for 30 seconds without burning it.

Tip · If the garlic starts to brown, turn the heat down right away so it doesn't turn bitter.
  5. Add the spinach

Add the frozen spinach to the skillet with the garlic and let it thaw over medium heat, stirring. Once it's tender, add a pinch of salt and pepper.

  6. Toss the pasta and spinach

Add the drained pasta to the skillet with the spinach. Mix well to spread the flavors. If it looks too dry, add a little pasta water.

  7. Stir in the ricotta

Dot the ricotta in pieces over the pasta and spinach. Warm for 1 min over low heat, stirring, so the cheese melts a little and blends in.

Tip · For a creamier texture, mash some of the ricotta with a fork before adding it to the pasta.
