Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 180 °C (gas mark 6) so it's nice and hot before the roast goes in.

  2. Prep the veggies

Peel the potatoes and cut them into big chunks. Peel the carrots and cut them into thick rounds. Peel the onion and cut it into wedges.

  3. Cook the onion

In the nonstick skillet, heat the oil over medium heat. Add the onion and cook it for 2 min without letting it brown.

Tip · To keep the onion from burning, turn down the heat if the skillet smokes or the onion starts to char.
  4. Add the veggies

Add the potatoes and carrots to the skillet with the onion. Mix well and let them cook for 5 min over medium heat, stirring now and then.

  5. Season the veggies

Sprinkle the veggies with thyme and a pinch of salt and pepper. Toss to spread the seasoning.

  6. Get the roast ready

Put the pork roast in a large bowl. Season it lightly with salt and pepper on all sides.

  7. Put it all in the oven

In a baking dish, spread out the browned veggies first, then set the pork roast on top. Roast at 180 °C for 30 min.

Tip · For a nicely browned roast, brush it with a little oil before turning it over.
  8. Turn the roast

Take the dish out of the oven and turn the pork roast over so it browns evenly. Put it back in the oven for 10 more min.

  9. Check if it's done

Poke the roast with the tip of a knife: the juices should run clear. If needed, cook it 5 min longer.

And there you go, it's readyCheck off every step to celebrate.
