  1. Peel and cut

    Peel the sweet potatoes and cut them into roughly 2 cm cubes. Peel the onion and slice it, then crush and mince the garlic clove.

  7. Adjust and serve

    Taste the curry and adjust the salt and pepper. Serve in shallow bowls and sprinkle with the toasted coconut.
