Step-by-step recipe

check things off as you go
  1. Prep the veggies

Peel the sweet potato and cut it into 2 cm cubes. Thinly slice the onion and garlic.

  2. Rinse the lentils

Put the 160 g of red lentils in the colander and rinse them under cold water until the water runs clear.

  3. Cook the onion and garlic

Heat the olive oil over medium heat in the saucepan. Add the onion and cook it for 4 min, then the garlic for 30 seconds.

  4. Toast the curry

Add the curry powder and stir for 30 seconds so it releases its aroma without burning.

  5. Start cooking

Add the sweet potato, lentils, coconut milk and 40 cl of water. Season with salt and pepper, stir and bring to a boil.

Tip · Red lentils thicken as they cook. Keep some hot water handy to loosen the curry if needed.
  6. Let it simmer

Turn down to low, cover and cook for 15 min, stirring now and then, until the sweet potato is tender and the lentils are soft.

Tip · Stir often and scrape the bottom, because the lentils stick easily as the curry thickens.
  7. Adjust and serve

Taste and adjust the salt and pepper. If it's too thick, add a little hot water and stir.

And there you go, it's readyCheck off every step to celebrate.
