Step-by-step recipe

  1. Rinse the quinoa

Put the 200 g of quinoa in a fine-mesh strainer and rinse it under cold water for 30 seconds to get rid of the bitterness.

Tip · Rinse the quinoa well, rubbing it with your hand, otherwise it keeps a bitter, soapy taste.
  2. Cook the quinoa

Tip the quinoa into a saucepan with 400 ml of water and a pinch of salt. Bring to a boil, cover and cook over low heat for 15 min until the water is absorbed.

  3. Hard-boil the eggs

Lower the 4 eggs into a saucepan of boiling water and cook for 10 min. Then run them under cold water.

Tip · Run the eggs under cold water right after cooking and tap them gently so they're easier to peel.
  4. Prep the veggies

Peel the 2 carrots and cut them into small dice. Cut the half cucumber into dice the same size.

  5. Make the sauce

In a small bowl, mix the 100 g of yogurt, the olive oil, the juice of the half lemon, the pepper and a pinch of salt if needed.

  6. Cool the quinoa

Fluff the cooked quinoa with a fork in the mixing bowl and let it cool for 5 min. Peel the eggs and cut them into quarters.

  7. Put the salad together

Add the carrots, cucumber and the 2 cans of tuna, drained and flaked, to the quinoa. Pour on the sauce and toss gently.

  8. Plate and serve

Divide the salad between 2 plates and set the egg quarters on top. Add pepper to taste.
