  1. Cook the red lentils

    Put the 160 g of red lentils in a saucepan with 500 ml of cold water. Bring to a boil, then simmer over medium heat, uncovered.

    Tip · Red lentils turn to mush fast, keep an eye on them and stop cooking as soon as they're tender but still whole.
  2. Soft-boil the eggs

    Meanwhile, bring water to a boil in the second saucepan. Gently lower in the 4 eggs with the slotted spoon and time 6 minutes at a low boil.

    Tip · Take the eggs out of the fridge 10 minutes ahead and lower them into water that's already boiling so they don't crack and the yolk stays runny.
  3. Cool and peel

    Take out the eggs and run them under cold water for 2 minutes. Peel them under a trickle of water, then set them aside.

  4. Drain the lentils

    When the lentils are tender, tip them into the colander and let them drain well. Move them to the mixing bowl.

  5. Prep the carrots

    Peel the 2 carrots and grate them. Add them to the mixing bowl with the lentils.

  6. Brown the bacon

    Cook the 100 g of smoked diced bacon in the dry skillet over medium heat until nice and golden. It gives off enough fat on its own.

  7. Dress the salad

    Add the bacon and its fat to the mixing bowl. Pour in 2 tbsp of olive oil and 2 tbsp of balsamic vinegar, season with salt and pepper and toss.

  8. Plate with the eggs

    Divide the salad between two plates. Cut the eggs in half and set 2 on each plate.
