  1. Peel the potatoes

    Peel the 400 g of potatoes and cut them into small dice, about 1 cm. Put them in the saucepan of cold water.

  2. Cook the potatoes

    Bring the water to a boil and cook the diced potatoes for 10 min until tender but not mushy. Drain well.

  3. Mash the potatoes

    In a bowl, mash the cooked potatoes with a fork or potato masher. Add the egg, flour, 0.5 tbsp of oil, salt and pepper. Mix well.

    Tip · If the mixture is too sticky, add a bit more flour to make the cakes easier to shape.
  4. Shape the cakes

    Divide the mixture into 4 equal portions. Shape them into flat cakes 1 cm thick with lightly oiled hands.

  5. Cook the cakes

    Heat the nonstick skillet over medium heat with a drizzle of oil. Add the cakes and brown them for 3 to 4 min per side until crispy.

    Tip · Don't crowd the skillet, cook the cakes in two batches if needed so they cook evenly.
  6. Make the slaw

    Thinly slice the 130 g of green cabbage. In a bowl, toss it with the plain yogurt, salt and pepper.

  7. Serve

    Plate the hot potato cakes with the slaw on the side.
