Step-by-step recipe

  1. Peel the potatoes

Peel the potatoes with a knife on a cutting board. Cut them into pieces of the same size so they cook evenly.

  2. Cook the potatoes

Put the potato pieces in a saucepan of cold salted water. Bring to a boil, then lower the heat and let them cook, covered, for 15 min.

  3. Cook the eggs

While the potatoes cook, put the eggs in a saucepan of cold water. Bring to a boil, then turn off the heat and let them sit for 10 min for soft-set eggs.

Tip · For perfect soft-set eggs, count 10 min after the water boils, not a minute more.
  4. Drain the potatoes

Drain the potatoes in a colander and let them cool slightly.

  5. Prep the lettuce

Wash the lettuce and cut it into pieces in a bowl.

  6. Peel the eggs

Take the eggs out of the water, run them under cold water and peel them. Cut them into pieces into the salad bowl.

  7. Make the vinaigrette

In a bowl, mix the mustard, oil, vinegar and a pinch of salt with a fork.

  8. Put the salad together

Add the warm potatoes to the bowl with the lettuce and eggs. Drizzle with the vinaigrette and toss gently.

Tip · For a cooler salad, run the potatoes under cold water after cooking before adding them.
