Step-by-step recipe

  1. Peel and cut the sweet potatoes

Peel the 600 g of sweet potatoes and cut them into 2 cm cubes so they cook fast.

  2. Cook the sweet potatoes

Put the cubes in a saucepan of cold salted water, bring to a boil, then let them simmer until a knife slides in with no resistance.

Tip · Start in cold salted water so the cubes cook evenly, without the outside falling apart before the center is done.
  3. Prep the mushrooms and eggs

Wipe the mushrooms, slice them and chop the parsley. In a bowl, beat the 6 eggs with salt and pepper.

  4. Pan-fry the mushrooms

Heat the olive oil in the skillet over high heat, add the mushrooms with salt and pepper and brown them. Set them all aside on a plate.

Tip · Don't stir the mushrooms too much at first and only salt them at the end if you want them to brown instead of releasing their water.
  5. Mash it up

Drain the sweet potatoes, put them back in the saucepan and mash them with 2 tbsp of crème fraîche, salt and pepper. Cover to keep warm.

  6. Cook and fill the omelet

Wipe out the skillet, melt the butter over medium heat, pour in the eggs and stir for 30 seconds. When the edges set, fill the center with half the mushrooms, then fold the omelet in half.

  7. Finish cooking

Cook 1 more minute per side over low heat, until the eggs are fully set in the middle. Cut the omelet in half.

  8. Plate it up

Divide the mash and omelet between two plates. Top with the rest of the mushrooms, add 1 tbsp of crème fraîche per plate and sprinkle with parsley.

And there you go, it's readyCheck off every step to celebrate.

How long does it keep?

Eat it fresh. An omelet is best soft, fresh out of the pan: reheated, it turns rubbery. Make it the day you eat it, it's done in 5 minutes!
