  1. Peel and cut the potatoes

Peel the 400 g of potatoes and cut them into small cubes, about 1 cm, so they cook fast. Rinse them and dry them well with the kitchen towel.

Tip · Dry the potatoes well after rinsing, or they'll stick and won't brown.
  2. Prep the mushrooms and parsley

Wipe the 250 g of mushrooms with a damp towel, then slice them. Finely chop the parsley.

  3. Beat the eggs

Crack the 6 eggs into the bowl, add a pinch of salt, some pepper and the parsley. Beat with a fork until smooth.

  4. Cook the potatoes

Melt half the butter (15 g) in the skillet over medium-high heat. Add the potatoes, salt, cover and cook 10 minutes, stirring now and then, until tender and golden.

  5. Add and brown the mushrooms

Add the mushrooms to the potatoes, uncovered, and sauté over high heat for 5 minutes until their liquid cooks off. Salt, pepper, then tip everything onto the plate.

  6. Pour the eggs into the skillet

Put the skillet back over medium heat with the rest of the butter (15 g). When it foams, pour in the beaten eggs and stir gently for 20 seconds with the spatula.

  7. Fill and cook the omelet

Spread the potatoes and mushrooms over the eggs, then let it cook over low heat for 3 minutes, until the omelet is fully set.

Tip · Make sure the egg isn't runny anymore before folding. If the top is still liquid, cover the skillet for 1 minute.
  8. Fold and serve

Fold the omelet in half with the spatula and cut it into two servings. Serve right away.

And there you go, it's readyCheck off every step to celebrate.

How long does it keep?

Eat it fresh. An omelet is best soft, fresh out of the pan: reheated, it turns rubbery. Make it the day you eat it, it's done in 5 minutes!
