Step-by-step recipe

check things off as you go
  1. Preheat the oven

Set the oven to 240 °C with the baking sheet inside, so it heats up at the same time.

  2. Cut the veggies

Cut the eggplant, zucchini and yellow bell pepper into dice or thin slices. Dice the 2 tomatoes without peeling them.

  3. Grill the veggies

Toss the eggplant, zucchini and bell pepper with 1 tbsp of olive oil, salt and pepper. Take out the hot baking sheet, spread them on it and roast for 12 min at 240 °C. Then move the veggies to a bowl and put the empty sheet back in the hot oven.

Tip · Spread the veggies in a single layer without piling them up, otherwise they steam instead of grilling.
  4. Roll out the dough

Unroll or roll out the dough on a sheet of parchment paper into a thin round. Brush it with the last tbsp of olive oil.

  5. Top the pizza

Scatter the diced tomatoes over the dough, then the grilled veggies. Tear the mozzarella (125 g) over the top, add the oregano, salt and pepper.

  6. Bake the pizza

Slide the pizza with its parchment paper onto the hot baking sheet and bake for 10 min at 240 °C, until the crust is golden and the mozzarella is melted.

Tip · Slide the pizza onto the hot sheet in one quick move and start checking it at 8 min, and make sure the parchment paper doesn't hang over the edge of the sheet.
  7. Add the prosciutto

Take the pizza out of the oven and lay the 100 g of torn prosciutto on top, without cooking it. Slice and serve right away.
