  1. Preheat the oven

    Turn the oven on to 220 °C, on convection if you have it.

  2. Cut the potatoes

    Wash the 290 g of potatoes and cut them into sticks about 1 cm thick, skin on if you like. Toss them in a mixing bowl with the 2 tbsp of olive oil, the pinch of salt and some pepper.

  3. Bake the fries

    Spread the sticks in a single layer on the baking sheet lined with parchment paper. Bake for 25 to 30 min, flipping them halfway through.

    Tip · Don't crowd the fries on the sheet, or they'll steam and won't brown. Use two sheets or bake them a bit longer if needed.
  4. Prep the toppings

    While the fries bake, slice the tomato, thinly slice the red onion and cut the 6 pickles into slices. Mix the mayo and ketchup in a little corner of your plate or keep them separate.

  5. Shape the patties

    Split the 140 g of ground beef into two 70 g portions. Flatten each one into a patty a little wider than the bun, with a small dip in the center.

  6. Cook the patties

    Heat the skillet over medium-high heat with no extra fat if it's nonstick, otherwise with a little oil. Cook the patties for 4 to 5 min per side, until they're cooked through with no pink.

    Tip · Don't smash the patties with the spatula while they cook, you'll lose the juices. Check they're gray-brown inside, with no pink.
  7. Melt the cheddar

    Lay 2 slices of cheddar on each patty for the last minute of cooking and cover the skillet with a plate so it melts. At the same time, toast the open buns alongside or in the oven on the sheet for 1 to 2 min.

  8. Build the burgers

    Spread the mayo and ketchup on the buns. Stack the bottom bun, tomato, onion, pickles, the cheesy patty, then the top bun.

  9. Serve with the fries

    Pull the fries out of the oven and serve them right away next to the burgers, with a little salt if needed.
