Turn the oven on to 200 °C with the rack in the middle and line the baking sheet with parchment paper.
Cut the sweet potatoes
Peel the 0.2 kg of sweet potatoes and cut them into thin sticks about 1 cm thick.
Bake the fries
Toss the sticks with 2 tbsp of oil, a little salt and half the paprika, then spread them on the sheet. Bake for 25 min, flipping them halfway through.
Tip · Don't pack the sticks on the sheet, otherwise they steam instead of browning. Keep them well spaced, in a single layer.
Prep the veggies
Thinly slice the 2 red onions and dice the 2 tomatoes. Lightly salt the tomatoes.
Cook the meat
Heat 1 tbsp of oil in the skillet over high heat and cook the 150 g of ground beef, breaking it up, until there's no pink left at all (70 °C in the center). Add the rest of the paprika, salt and pepper, then stir in the crème fraîche and turn off the heat.
Tip · Break up the meat well with the spatula at the start so you get small, evenly cooked pieces.
Fill the tortillas
Lay 8 tortillas on a baking sheet or the counter. Add half the cheese, then the meat, tomato and onion, then the rest of the cheese.
Melt and serve
Once the fries are out, put the filled tortillas in the oven at 200 °C for 5 min to melt the cheese. Fold them and serve with the hot fries.
And there you go, it's readyCheck off every step to celebrate.

Pantry salt, oil and spices aren't counted. Your store and your brands will move the total, but the ballpark is right.
How long does it keep?
Eat it fresh. Crunch doesn't survive the fridge: fried or breaded ahead, it comes out all soggy. Save it for the day you eat it, that's when it's good!
