  1. Peel the potatoes

    Peel the potatoes and cut them into 2 cm cubes. Rinse them in cold water to wash off the starch.

  2. Cook the potatoes

    Bring 50 cl of water to a boil in the saucepan. Add the potatoes and cook for 10 min over medium heat. Drain them in the colander.

  3. Cook the onion

    Heat the oil in the nonstick skillet over medium heat. Add the sliced onion and cook for 3 min until it turns translucent.

    Cover the skillet and cook the eggs over very low heat for 4 to 5 min, until the whites are set but the yolks are still runny.
