  1. Peel the potatoes

Peel the potatoes with the knife on the cutting board. Cut them into small cubes, about 1.5 cm on each side, so they cook evenly.

  2. Cook the onion

Heat the oil in the nonstick skillet over medium heat. Add the finely sliced onion and cook for 3-4 min until translucent.

  3. Cook the potatoes

Add the potatoes to the skillet with the onion. Salt lightly and cook over medium-low heat for 15-20 min, stirring now and then, until tender and lightly golden.

Tip · For really golden potatoes, don't stir them too often. Let them brown for 2-3 min between stirs.
  4. Prep the eggs

In a bowl, beat the eggs with a pinch of salt and pepper using a fork. Set aside.

  5. Add the eggs to the potatoes

Push the potatoes to the side of the skillet to make room. Add the beaten eggs to the center and cook over low heat, stirring gently with the wooden spoon, for creamy scrambled eggs.

Tip · If the eggs cook too fast, lower the heat and add a tablespoon of water to slow things down without drying them out.
  6. Mix and serve

Fold the scrambled eggs into the potatoes and mix well. Taste and adjust the seasoning if needed. Serve right away, nice and hot.

And there you go, it's readyCheck off every step to celebrate.
