Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 180°C (thermostat 6).

  2. Cut the cauliflower

Wash the cauliflower, remove the leaves and cut it into small florets. Peel the stem and cut it into pieces.

  3. Cook the cauliflower

Bring 50 cl of water to a boil in the saucepan. Add the cauliflower and a pinch of salt and cook for 10 min over medium heat. Drain well.

Tip · To keep the cauliflower from going mushy, drain it well after cooking and give it a shake in the colander.
  4. Prep the fish

Pat the hake fillets dry with paper towels. Season lightly with salt and pepper on both sides.

  5. Sear the fish

Melt half the butter (10 g) in the skillet over medium heat. Add the fillets and brown them for 3 min per side. Set aside.

  6. Make the sauce

In the same skillet, add the crème fraîche, nutmeg, the rest of the butter (10 g) and a pinch of salt. Let it simmer for 5 min over low heat, stirring constantly.

  7. Assemble the gratin

Arrange the cauliflower florets and fish fillets in the baking dish. Spoon the cream sauce over the top. Scatter the shredded cheese evenly.

Tip · For a crispier gratin, slide it under the broiler for 2 to 3 min, keeping an eye on it so it doesn't burn.
  8. Bake the gratin

Put the dish in the preheated oven and bake for 15 min until the top is nicely golden.

And there you go, it's readyCheck off every step to celebrate.
