Step-by-step recipe

check things off as you go
  1. Prep the vegetables

Peel the sweet potatoes and cut them into 2 cm cubes. Peel and slice the onion, then chop the garlic.

Tip · Cut the sweet potatoes into even cubes so they all cook at the same time.
  2. Drain the chickpeas

Open the can of chickpeas, pour them into the colander and rinse under cold water. Let them drain.

  3. Sauté the onion

Heat 1.5 tbsp of olive oil in the skillet over medium heat. Add the onion and sauté for 4 minutes, stirring, until translucent.

  4. Add the garlic and curry powder

Add the garlic and 0.5 tbsp of curry powder. Stir for 30 seconds without letting it burn.

Tip · Burnt curry powder turns bitter. Lower the heat and move quickly on to the tomatoes.
  5. Add the tomatoes and sweet potatoes

Pour in the can of crushed tomatoes, then add the sweet potato cubes, salt and pepper. Stir well.

  6. Start cooking

Cover and cook over medium-low heat for 10 minutes, stirring halfway through. Add a small glass of water if it sticks.

  7. Add the coconut milk and chickpeas

Pour the 27 cl of coconut milk into the skillet and add the drained chickpeas. Stir well and let it simmer over low heat, covered, for 10 minutes.

  8. Check and adjust

Poke a piece of sweet potato with the tip of a knife: it should be tender. If needed, keep cooking 3 to 5 minutes, then taste and adjust the salt and pepper.

And there you go, it's readyCheck off every step to celebrate.
