Step-by-step recipe

  1. Prep the veggies

Peel the sweet potato and cut it into roughly 2 cm cubes. Peel the onion and slice it, then crush the 2 garlic cloves and mince them.

  2. Cook the onion

Heat 1 tbsp of olive oil in the skillet over medium heat. Add the onion with a pinch of salt and cook it until it turns translucent.

  3. Add the garlic and curry

Add the garlic and the 2 tsp of curry powder. Stir nonstop so the spices heat up without burning.

  4. Cook the sweet potato

Add the sweet potato cubes and stir to coat them well in the spices. Pour in a small glass of water, cover and cook over medium-low heat until they're tender when you poke them with a knife.

Tip · If the skillet gets dry before the sweet potato is tender, add a little water, one tablespoon at a time, so it doesn't stick.
  5. Drain the chickpeas

Pour the 400 g of canned chickpeas into the colander and rinse them under cold water. Let them drain well.

  6. Add the chickpeas and coconut

Add the drained chickpeas to the skillet with the 20 cl of coconut milk. Stir and let it heat over low heat, uncovered.

  7. Taste and adjust

Taste the sauce and add salt and pepper to your liking. If it's too thick, add a little water and stir.

Tip · This curry goes great with rice or bread to mop up the sauce, if you already have some at home.
