  1. Boil the water

    Pour about 2 l of water into the saucepan (not the wok), salt it lightly and bring it to a boil over high heat.

    Tip · Make sure you use a saucepan for the water, because the wok needs to stay clean and dry to sear the beef.
  2. Prep the veggies

    Peel the carrots and cut them into thin sticks. Cut the bell peppers into strips, thinly slice the red onion and mince the garlic.

  3. Marinate the beef

    In the mixing bowl, mix the beef with 2 tbsp of soy sauce, the sesame oil and a little pepper. Let it marinate while the water heats up.

  4. Cook the noodles

    Drop the 200 g of noodles into the boiling water and leave them for 3 min, or follow the package time. Drain, rinse under cold water and set aside.

  5. Sear the beef

    Heat the olive oil in the dry wok over very high heat. Sear the beef for 2 min, stirring, then move it back to the mixing bowl.

    Tip · Don't add all the beef at once if your wok is small: it would release water and boil instead of browning. Sear it in two batches.
  6. Stir-fry the veggies

    In the same wok, stir-fry the carrots for 3 min over high heat, then add the bell peppers, onion and garlic for 2 min. The veggies should stay crunchy.

  7. Toss and serve

    Put the beef and noodles back in the wok with the remaining 2 tbsp of soy sauce. Toss for 1 min over high heat, taste, adjust the salt and pepper, then serve right away.
