Step-by-step recipe

check things off as you go
  1. Rinse the rice

Put the 200 g of basmati rice in the colander and rinse it under cold water until the water runs almost clear. Drain well.

  2. Cook the rice

Put the rice in the saucepan with 350 ml of water and half the pinch of salt. Bring to a boil, cover, then turn the heat way down.

  3. Wilt the spinach

Wash the 300 g of spinach. Heat the olive oil in the skillet over medium-high heat and add the spinach by the handful. Stir until wilted and the water cooks off, then tip it into the mixing bowl.

Tip · Press the spinach against the skillet with the spatula to squeeze out the water, or it makes the rice and eggs soggy.
  4. Beat the eggs

Crack the 4 eggs into a bowl or the emptied mixing bowl, add the rest of the salt and the pepper. Beat with a fork until smooth.

  5. Let the rice steam

Turn off the heat under the rice without lifting the lid. Let it rest covered.

  6. Scramble the eggs

Melt the 20 g of butter in the skillet over medium-low heat. Pour in the eggs and stir gently with the spatula until fully set but not dry.

Tip · Pull the skillet off the heat while the eggs are still a little glossy: the leftover heat finishes cooking them without drying them out.
  7. Toss and serve

Fluff the rice with a fork. Add the spinach and scrambled eggs, toss gently and serve right away.

Eat it fresh. Soft-boiled, poached or scrambled eggs are made to order: reheated, they firm up and the runny yolk is gone. Make them the day you eat them, it's done in 5 minutes!
