  1. Bring the water to a boil

    Fill the saucepan with water, add a good pinch of salt and put it over high heat. Cover it to save time.

    Rinse the 130 g of spinach in cold water and drain it well. Pull off the big stems if they're tough.

  6. Scramble the eggs

    Turn down the heat, add the butter to the skillet, then pour the beaten eggs over the spinach. Stir gently with the spatula 2 to 3 min, until the eggs are cooked through but still soft.

    Tip · Pull the skillet off the heat as soon as the eggs are almost set, the heat finishes cooking them. Otherwise they get dry and rubbery.
  7. Drain and toss
