Step-by-step recipe

  1. Boil the water

Fill the saucepan halfway with water and bring it to a boil over high heat. Lightly salt the water.

  2. Cook the penne

Drop the penne into the boiling water and let it cook for 10 to 12 min, depending on how al dente you like it. Drain in the colander without rinsing.

  3. Preheat the oven

Preheat the oven to 180 °C (gas mark 6).

  4. Make the tomato sauce

In the nonstick skillet, heat the tomato sauce over medium heat. Add the peeled and crushed garlic, the dried basil, salt and pepper. Let it simmer for 5 min.

Tip · If the tomato sauce is too thick, add 2 tbsp of pasta water to loosen it.
  5. Mix the pasta and sauce

In a large bowl, mix the drained penne with the hot tomato sauce.

  6. Add the cheeses

Stir in the crumbled ricotta and half of the diced mozzarella. Mix well to coat the pasta.

  7. Move it to the dish

Spoon the mixture into the baking dish. Top with the rest of the mozzarella and the grated Parmesan.

  8. Bake

Bake at 180 °C for 15 min until the top is golden and bubbly.

Tip · Keep a close eye on it after 10 min in the oven. The cheese should be golden, not burned.
  9. Make the salad

Wash and spin dry the green salad. Set aside.

  10. Serve

Serve the baked penne piping hot with the green salad on the side.
