  1. Cut the tofu

Drain the tofu by pressing it lightly between two sheets of paper towel. Cut it into 2 cm cubes, trimming off any parts that are too soft.

Tip · To press the tofu, set something heavy on top (like a saucepan filled with water) for 5 min if you want to save time.
  2. Prep the broccoli

Wash the broccoli and cut it into small florets. Peel the stems if they're too thick and slice them into rounds.

  3. Cook the noodles

Bring 500 ml of water to a boil in the saucepan. Add the rice noodles and cook for 4 min over high heat. Drain in the colander and rinse under cold water to stop the cooking.

  4. Cook the tofu

Heat 1 tbsp of oil in the skillet over medium heat. Add the tofu cubes and brown them for 5 min, stirring often. Season lightly with salt and pepper.

Tip · If the tofu sticks to the skillet, add a little hot water and scrape with a spatula to loosen it before it burns.
  5. Add the garlic and broccoli

Mince the garlic and add it to the skillet with the broccoli. Cook for 3 min over high heat, stirring. Season with salt and pepper.

  6. Toss with the noodles

Add the drained noodles to the skillet with the tofu and broccoli. Add the soy sauce and sesame oil. Toss well to coat everything evenly.

  7. Adjust the seasoning

Taste and adjust the salt and pepper if needed. Serve right away so the noodles don't stick.
