  1. Preheat the oven

Turn the oven on to 200 °C (gas mark 6-7). Set the rack in the middle so everything cooks evenly.

  2. Prep the chicken

Peel the garlic and cut it into thin slices. Score the skin of the chicken breasts in a crisscross pattern and push the garlic slices into the cuts. In a mixing bowl, mix the olive oil, cumin, paprika, salt and pepper. Brush the chicken breasts with this mixture.

Tip · To help the spices stick to the chicken, press the meat lightly with your fingertips before brushing it.
  3. Cook the chicken

Place the chicken breasts in the nonstick skillet over medium heat. Brown them for 5 min per side, uncovered. Then bake them for 20 min at 200 °C.

  4. Peel the vegetables

Peel the carrots and zucchini. Cut them into thick 1 cm rounds. Peel the onion and dice it.

  5. Cook the vegetables

In the same skillet you used for the chicken (no need to wash it), cook the onions over low heat for 3 min. Add the carrots and zucchini, stir and cook for 10 min over medium heat, stirring now and then.

Tip · If the vegetables are too dry, add 2 tbsp of water to the skillet and cover for 2 min to soften them.
  6. Cook the couscous

Bring 300 ml of water to a boil in the saucepan. Add the couscous, cover and take it off the heat. Let it swell for 5 min off the heat. Fluff it with a fork before serving.

  7. Serve

Spoon the couscous onto the plates, add the vegetables and set the roast chicken on top.
