  1. Preheat the oven

    Turn the oven on to 180 °C convection. Take the roast out of the fridge and season it with salt and pepper on all sides.

  2. Brown the roast

    Heat the sunflower oil in the skillet over high heat. Sear the roast 2 to 3 min per side, until nicely browned, then set it in the baking dish.

  3. Prep the apples

    Drain the potatoes, put them back in the saucepan and mash them. Add 15 g of butter, the crème fraîche, salt and pepper, then stir. Cover and keep warm.

  7. Cook the green beans

    Trim the green beans. Drop them into the second saucepan of salted boiling water for 10 to 12 min, then drain.

  8. Butter the beans

    Put the drained beans back in their saucepan with the remaining 5 g of butter, salt and pepper. Toss off the heat.

  9. Let the roast rest

    Take the dish out of the oven, cover the roast with foil and let it rest. Keep the juices and apples in the dish.

  10. Slice and serve

    Cut the roast into slices about 1.5 cm thick. Plate them with the apples, juices, mash and green beans.
