Turn the oven to 200 °C. Finely chop the parsley and rosemary leaves, then crush 1 garlic clove.
Season the thighs
Lay the thighs on the baking sheet and rub them with 1 cl of olive oil, the crushed garlic, rosemary, half the parsley, salt and pepper.
Roast the chicken
Roast the thighs for 40 min at 200 °C, flipping them halfway through. The juices should run clear and the center hit 74 °C.
Tip · Poke the thigh at its thickest point, near the bone: the juices should run clear, no pink. If not, give it 5 more min in the oven.
Cook the sweet potatoes
Peel the sweet potatoes (320 g) and cut them into cubes. Drop them into a saucepan of cold salted water, bring to a boil then cook for 15 min, until they mash easily with a fork.
Cook the green beans
Trim the green beans (200 g). Cook them for 8 min in salted boiling water, in a second saucepan or after the sweet potatoes, then drain.
Make the mash
Drain the sweet potatoes and put them back in the saucepan with all the butter (10 g) and all the crème fraîche (4 cl). Mash them up, season with salt and pepper.
Sauté the green beans
Mince the 2nd garlic clove. Heat it for 1 min in the skillet with 1 cl of olive oil, add the beans and sauté for 5 min over high heat. Season with salt and pepper.
Tip · Dry the beans well after draining, otherwise they boil in the skillet instead of sautéing. Add the garlic just before them so it doesn't burn.
Plate and serve
Serve the thighs on the mash with the beans, and sprinkle with the rest of the parsley. Spoon the juices from the baking sheet over the top.
And there you go, it's readyCheck off every step to celebrate.
