  1. Chop the onions

Peel the onions and cut them into small cubes. Set them aside in a bowl.

  2. Grill the merguez

In the skillet over medium heat, cook the merguez for 5 min, turning them often. Take them out and slice them into rounds. Set aside.

  3. Cook the onions and tomato paste

In the same skillet, add a drizzle of olive oil. Cook the onions for 3 min over medium heat. Add the tomato paste and stir for 1 min.

  4. Add the chopped veggies

Peel and cut the eggplant, zucchini and bell peppers into 2 cm cubes. Add them to the skillet with the onions. Cook for 5 min over high heat, stirring.

Tip · For nicely charred veggies without too much oil, cook them over high heat, uncovered. Add a splash of water if they stick.
  5. Cook the rice

In the saucepan, bring 20 cl of water to a boil with a pinch of salt. Add the basmati rice, cover and let it cook over low heat for 12 min. Turn off the heat and let it rest for 5 min.

  6. Grill the rest of the veggies

In the skillet, add a little olive oil if needed. Grill the remaining veggies for 5 min over high heat until they're tender and lightly browned.

  7. Mix it all

In the skillet, add the sliced merguez, the grilled veggies and the drained rice. Mix well and season with salt and pepper.

Tip · If the rice is too dry, add 2 cl of hot water and stir before serving.
  8. Let it rest

Cover the skillet and let it rest for 5 min so the flavors blend.

And there you go, it's readyCheck off every step to celebrate.
