  1. Prep the veggies

    Peel the onion and slice it thin. Peel the 400 g of sweet potatoes and cut them into 2 cm cubes.

  2. Rinse the lentils

    Rinse the 150 g of red lentils in the colander under cold water until the water is almost clear. Drain them.

    Tip · Red lentils foam as they cook. A good rinse cuts down the foam, and you can skim off the extra with a spoon.
  3. Cook the onion

    Heat the canola oil over medium heat in the saucepan. Add the onion with a pinch of salt and cook it, stirring, until it turns translucent.

  4. Toast the curry

    Add the tablespoon of curry powder and stir for 30 seconds to wake up the flavors, without letting it burn.

  5. Add the sweet potatoes and lentils

    Pour the sweet potatoes and lentils into the saucepan, then add about 50 cl of hot water. Stir and bring to a simmer.

  6. Simmer covered

    Cover and let it simmer over low heat, stirring now and then. If it sticks or the liquid runs low, add a little hot water, up to 80 cl total.

    Tip · The lentils soak up a lot of water and stick to the bottom. Stir the bottom of the saucepan often and add hot water as soon as the curry gets too thick.
  7. Add the spinach

    Add the 200 g of frozen spinach straight into the saucepan. Cover and keep cooking over low heat, stirring so it thaws.

  8. Finish with the coconut milk

    Pour in the 10 cl of coconut milk, stir and heat for 2 minutes. Taste, then season with salt and pepper.
