  1. Preheat the oven

    Turn the oven on to 200 °C. Line the baking sheet with parchment paper.

  2. Cut the sweet potatoes

    Peel the 390 g of sweet potatoes and cut them into 2 cm cubes. Put them in the mixing bowl.

  3. Season the sweet potatoes

    Add 1 tbsp of olive oil, 1 tsp of curry powder, the salt and the pepper. Toss well.

  4. Roast the sweet potatoes

    Spread the cubes on the baking sheet in a single layer and slide it into the oven at 200 °C. Flip them halfway through.

    Tip · Don't pile the cubes up on the baking sheet, or they'll steam instead of browning.
  5. Slice the onions and garlic

    Peel the 2 onions and slice them thinly. Crush the 4 garlic cloves.

  6. Sauté the onions

    Heat 1 tbsp of olive oil in the saucepan over medium heat. Sauté the onions for 5 min, then add the garlic and 1 tsp of curry powder for 1 min.

  7. Cook the lentils

    Rinse the 130 g of red lentils and add them to the saucepan with the coconut milk (31 cl) and 30 cl of water. Let it simmer over low heat, stirring now and then, until they're soft.

    Tip · Stir often toward the end, red lentils stick to the bottom fast. If the dal gets too thick, add a little water.
  8. Put it together and serve

    Taste and adjust the salt and pepper. Divide the dal between two shallow bowls and top with the roasted sweet potatoes.
