  1. Prep the vegetables and lentils

    Rinse the 160 g of green lentils under cold water in the colander. Peel the sweet potato and cut it into 2 cm cubes, then slice the onions and crush the garlic cloves.

  2. Sauté the onions and garlic

    Heat the 2 tbsp of olive oil in the saucepan over medium heat. Add the onions with a pinch of salt and sauté for 5 min, then add the garlic for 1 min.

    Add the 20 cl of coconut milk and stir. Let it simmer uncovered for 5 min so the dal thickens, then adjust the salt and pepper.

    Tip · If the dal is too runny, mash a few sweet potato cubes against the side with the spoon to thicken it naturally.
  7. Chop the cilantro

    While the coconut milk simmers, wash and chop the bunch of cilantro.

  8. Serve the dal

    Divide the dal between two shallow bowls and sprinkle with the chopped cilantro.
