  1. Prep the veggies

    Peel the sweet potatoes and cut them into 2 cm cubes. Peel the onion and slice it, then crush the 2 garlic cloves.

  2. Rinse the lentils

    Put the 200 g of red lentils in the colander and rinse them under cold water until the water is almost clear. Drain them well.

  3. Cook the onion

    Heat 1 tbsp of olive oil over medium heat in the saucepan. Cook the onion for 4 to 5 min, stirring, until it turns translucent, then add the garlic.

  4. Toast the curry

    Tip · Stir the coconut milk before pouring it in, because the cream separates in the can. Leftover coconut milk keeps in the fridge in a closed jar.
  7. Season and serve

    Add 1 pinch of salt and 1 pinch of pepper, taste and adjust if needed. Lightly mash a few sweet potato cubes to thicken it, then serve hot.
