Cut the 300 g of chicken breast into thin strips (remove any sinew or skin if needed). Season with salt and pepper.
Cook the chicken
Heat the tablespoon of olive oil in the skillet over medium-high heat. Cook the strips for 6 to 8 min, flipping them, until golden with no pink left in the center.
Tip · Don't stir the strips nonstop, let them brown for 2 to 3 min before flipping. Cut the thickest one to check it's no longer pink.
Shred the red cabbage
While it cooks, finely shred the 200 g of red cabbage with a knife. Put it in a bowl.
Grate the carrot
Grate the carrot and add it to the red cabbage. Pour in the lemon juice, season with salt and pepper and toss.
Mash the avocados
Cut the 2 avocados in half, remove the pits and scoop out the flesh. Roughly mash it with a fork in the other bowl with salt and pepper.
Warm the tortillas
Once the chicken is out of the skillet, warm each tortilla for 20 seconds per side in the hot skillet to soften them.
Fill and roll
Spread the mashed avocado over the 4 tortillas, then add the chicken, the red cabbage slaw and 100 g of Greek yogurt split evenly. Fold in the sides and roll up tightly.
Tip · Put just a little filling in the middle and fold up the bottom of the tortilla first before rolling, otherwise the wrap tears.
And there you go, it's readyCheck off every step to celebrate.
