  1. Boil the water

Fill the saucepan halfway with water and bring it to a boil over high heat. Add a pinch of salt.

  2. Cook the pasta

Add the 160 g of pasta to the boiling water and stir with the wooden spoon. Let it cook for 8 to 10 min, following the time on the package.

  3. Brown the lardons

Meanwhile, heat the nonstick skillet over medium heat. Add the 100 g of lardons and brown them for 3 to 4 min without adding any fat.

  4. Beat the eggs

In a bowl, beat the 2 eggs with a fork. Add half of the Parmesan (15 g) and a pinch of pepper. Mix well.

  5. Drain the pasta

Once the pasta is al dente, drain it in the colander and save a little of the cooking water (about 50 ml).

Tip · Save a little cooking water. It helps bring the sauce together if it gets too thick.
  6. Toss the carbonara

Off the heat, add the pasta to the skillet with the lardons. Add the egg and cheese mixture and stir quickly. If it gets too thick, add a splash of cooking water.

Tip · Don't leave the skillet on the heat while you stir in the eggs, or they'll turn into scrambled eggs.
  7. Serve the carbonara

Divide among plates, sprinkle with the rest of the Parmesan (15 g) and add a grind of pepper.

And there you go, it's readyCheck off every step to celebrate.
