  1. Peel the potatoes

    Peel the potatoes and cut them into 1 cm thick sticks. Rinse them in cold water to wash off the starch.

  2. Make the batter

    In a bowl, mix the flour, half the lager (7 cl), a pinch of salt and a little pepper. Whisk until smooth.

  3. Fry the potatoes

    Heat 24 cl of sunflower oil in the saucepan to 160°C. Add the sticks and cook for 10 min until tender but not golden. Drain them on paper towels.

    Tip · To check the oil temperature, drop in a piece of potato: if it rises slowly and bubbles, you're good.
  4. Brown the potatoes

    Raise the oil temperature to 180°C. Put the sticks back in and fry until golden, 3 to 4 min. Drain them again.

  5. Prep the hake

    Pat the hake fillets dry with paper towels. Season them lightly with salt and pepper on both sides.

  6. Coat the hake

    Dip each fillet in the rest of the batter to coat it well. Let it sit for 1 min so the batter sticks.

    Tip · If the batter is too thick, thin it with a bit of the leftover beer, just a little.
  7. Fry the hake

    Heat 12 cl of sunflower oil in the nonstick skillet over medium heat. Cook the fillets for 3 to 4 min per side until golden and cooked through.

  8. Make the coleslaw

    Finely grate the green cabbage and carrot. In a bowl, toss them with the mayonnaise, salt and pepper. Mix well.

  9. Serve

    Plate the hake fillets with the fries and coleslaw on the side.
