Turn the oven to 200 °C, convection if you have it.
Prep the garlic and thyme
Crush the 2 garlic cloves without peeling them. Strip the leaves off 2 thyme sprigs and keep the other 2 whole.
Season the thighs
In the roasting dish, rub the 2 chicken thighs with the 2 tsp of olive oil, the salt, pepper and thyme leaves. Add the crushed garlic and the 2 whole thyme sprigs around them.
Roast the chicken
Slide the dish in at 200 °C. Flip the thighs halfway through so the skin browns on both sides. The chicken is done when the juices run clear and the center hits 74 °C.
Tip · Poke the thigh near the bone, the juices should run clear, no pink. If not, put it back in the oven for 5 to 10 min.
Cook the sweet potato
Meanwhile, peel the 300 g of sweet potato and cut it into 3 cm cubes. Drop them into a saucepan of cold salted water, bring to a boil and cook until a knife slides in with no resistance.
Cook the green beans
Trim the 160 g of green beans. Cook them in a saucepan of salted boiling water until tender but still crunchy, then drain.
Mash it up
Drain the sweet potato. Mash it with the 20 g of butter and the 6 cl of warm or cold milk until smooth. Add pepper and a little salt if needed.
Tip · Mash the cubes well drained to avoid a watery mash, and add the milk little by little. You can squeeze the peeled roasted garlic into the mash for extra flavor.
Plate up
Take the chicken out of the oven and check it's cooked through. Serve the thighs with their juices, the roasted garlic, the mash and the green beans.
And there you go, it's readyCheck off every step to celebrate.
