Step-by-step recipe

  1. Prep the vegetables

Peel the sweet potato and cut it into 1.5 cm cubes. Slice the onion, chop the garlic and grate or finely chop the 10 g of ginger.

  2. Cut the chicken

Cut the 240 g of chicken breast into 2 cm to 3 cm pieces. Season with the pinch of salt and pepper.

  3. Brown the chicken

Heat 1 tsp of olive oil in the sauté pan over medium-high heat. Brown the chicken for 4 min, stirring, then move it to a plate.

Tip · Don't move the pieces too soon, let them brown for 2 min on one side. They'll get golden without giving off water.
  4. Sauté the aromatics

In the same pan, add the second tsp of oil over medium heat. Sauté the onion for 3 min, then add the garlic, ginger and curry powder and stir for 1 min.

  5. Add the sweet potato and coconut milk

Put the chicken back in, add the sweet potato, then pour in the 16 cl of coconut milk and 10 cl of water. Stir, scraping the bottom.

  6. Let it simmer

Cover and let it simmer gently over low heat for 15 to 18 min, stirring now and then. The sweet potato should be tender and the chicken white all the way through, with no pink and clear juices.

Tip · If the sauce gets too thick, add a splash of water. If it's too runny, simmer uncovered for the last 5 minutes.
  7. Adjust and serve

Taste and adjust the salt and pepper. Chop the 10 g of cilantro and sprinkle it over the curry right before serving.

And there you go, it's readyCheck off every step to celebrate.
