Preheat the oven to 180 °C. Season the 500 g pork roast with salt and pepper on all sides, then rub it with the dried thyme.
Sear the roast
Melt 10 g of butter in the Dutch oven over medium-high heat. Brown the roast on all sides.
Into the oven
Put the Dutch oven in the oven at 180 °C. After 45 min, brush the roast with 1 tbsp of honey and put it back in for 10 min. The pork should be cooked through, with no pink, at least 70 °C inside.

Mash
Mash the celery root in the mixing bowl with the potato masher. Add 10 g of butter, the 65 g of crème fraîche, salt and pepper, then stir.
Caramelize the apples
Cut the 3 apples into wedges. Brown them in the skillet with 10 g of butter over medium heat. Add 1 tbsp of honey for the last 2 minutes.
Rest, slice and serve
Take out the roast and let it rest 10 min under foil or a lid. Slice it and plate it with the mash, green beans and apples.
Tip · Resting keeps the juices in the meat. Cut a piece from the center to check there's no pink at all.
