Turn the oven on to 200 °C (convection if you have it). Take the roast out of the fridge so it's not ice cold when it goes in.

Mash the potatoes with the butter, then add the warm milk little by little. Stir with the spatula and season with salt and pepper.
Tip · Warm the milk before adding it for smooth mashed potatoes, and never blend the potatoes, they'd turn gluey.
Rest and slice
Take out the roast, cover it with foil and let it rest 10 min. Slice it and spoon the pan juices over it.
Plate up
Chop the rest of the parsley. Serve the roast slices with the mash and green beans, then sprinkle with parsley.
