  1. Peel and slice the potatoes

    Peel the 500 g of potatoes and cut them into thin slices, about 3 mm. The thinner they are, the faster they cook.

  2. Cook the potatoes

    Heat 1 tbsp of olive oil over medium heat, add the potatoes, and season with salt and pepper. Cover and cook, stirring now and then, until tender at the tip of a knife.

  3. Beat the eggs

    Put the skillet back over medium-low heat with the remaining 1 tbsp of olive oil, then add the mixture. Cook without stirring until the bottom is golden and the edge is set.

    Set the plate on top of the skillet, flip the omelet in one quick move and slide it back into the skillet. Cook for 3 more min so the egg is fully set in the center.
