  1. Peel and chop

Peel the onion and carrots. Cut the onion into small cubes. Peel the carrots and cut them into thin 3 mm rounds.

  2. Cook the onion

Set the skillet over medium heat with the oil. Add the diced onion and cook for 3 min, stirring, until translucent.

  3. Add carrots and curry

Add the carrot rounds to the skillet with the onion. Sprinkle with the curry powder and mix well to coat the vegetables. Cook for 2 min over medium heat.

  4. Add lentils and tomatoes

Rinse the lentils in cold water in the colander. Add them to the skillet with the crushed tomatoes and 500 ml of water. Bring to a boil.

Tip · If the water evaporates too fast while the lentils cook, add a little hot water to keep them covered.
  5. Cook the lentils 25 min

Lower the heat to keep a gentle simmer. Cook the lentils for 25 min, stirring now and then. Season lightly with salt at the end.

  6. Cook the rice 35 min

While the lentils cook, put the rice in a saucepan with 300 ml of cold water. Bring to a boil, then lower the heat and simmer covered for 35 min without touching it.

Tip · For perfect rice, never lift the lid while it cooks.
  7. Drain and serve

Drain the rice if there's any water left. Serve the lentil curry piping hot over the rice.
